Frozen Key Lime Pie

Crust

1 1/4 cups fine graham cracker crumbs(about 20 squares)
1/3 cup butter or margarine, melted
2 Tbsp. sugar

Filling

1 can(14oz) sweetened condensed milk
2 Tbsp. freshly grated lime peel
1/2 cup lime juice
2 pints lemon sorbet, slightly softened
Green and yellow food coloring( I only use green!)
Topping

1 cup heavy whipping cream
1/4 cup confectioners sugar

Garnish: Lime Wedge

1. Crust- Coast a 9 inch pie plate with nonstick spray. Mix ingredients in a bowl until blended. Press over bottom and sides. Freeze for 5 mins.

2. Filling-Stir first three ingredients in a medium bowl. Add sorbet. Stir briskly( I use electric beaters!) until smooth. Stir in food colors. Spread into crust( I POUR into the crust as mine pretty much becomes liquid all over again)

3. Freeze 6 hours( I prefer to make my night before!)

4. Beat cream and sugar with mixer on high speed until soft peaks form. Serve with pie and garnish with lime!
